Sunday Breakfast - mostly from the garden

I have a confession to make, I really struggle with breakfast.


Its not a disordered food thing, its actually that I don't always love bread (or maybe bread doesn't love me), and I don't actually like eggs very much, or for a really long time bacon. And I loathe avocado with every fibre of my being, I take it out of sushi, and cannot tolerate the feel of it in any food, no matter how tasteless the individual specimen might be.


Now when you take that into account, have a think about every breakfast menu in the western world, and imagine the choices I have. So I have become the expert of hiding the taste of eggs, and have also been convinced by a carnivorous partner that my dislike of bacon is down to bad bacon. It took a lot for that one to work, but I actually like the stuff now, although texture is still a thing (spicy neurodivergence awareness right there).


Part of this has been the trusty omelette, which I acknowledge seems counterintuitive to the hating eggs thing, but roll with me here. You see if you add enough other things to the eggs, you genuinely can't taste them, which is where Cuban Oregano or 5-in-1 herb comes in*. I learnt this trick in an omelette bar in a hotel in Vietnam, once you start following the garbage bin philosophy (keep throwing things in until it's spilling over and you just can't take it anymore), everything starts to work.


*A good Chilli Scrambled Eggs will cover this one off as well, my personal favourite so far is the Roma Bar, but happy to be educated on other options.


Garbage Bin Omelette

The basics are -


Cook it in butter if possible, it just tastes better

If you sauté all the garbage bin elements, they will taste better, or at least more cooked

Use whatever you want, this lot mostly came from our side garden and it was really just a lazy grab whatever



Specifics for this exact version -


Half a Kransky (leftover from making pizza the night before, I actually prefer Chorizo)

A good handful of Brazilian Spinach

1 Cuban Oregano leaf, chopped with the centre stem removed

A spring onion

5 Slightly whisked Eggs (this was cut in half to feed two of us)

1 Handful of cheese that you like, I used feta, but it a whatever is in the fridge choice really

A knob of butter


Saute everything except the eggs in a good cast iron fry pan, or whatever you have that makes a good omelette, then remove from the pan. Turn the heat down fairly low and add the egg, ensuring the pan is well lubricated to prevent sticking, for obvious reasons. Let the egg mostly cook, basically till there is a layer of runny on top of solid, then add the bits back in and spread the cheese over. I like to cover just one half to make flipping easier, but you do you.


Flip the omelette over, cut in half (or not), and slide onto a plate, with some bread, or not, again whatever works.


So apart from helping out the other breakfast confused people like me, this is another lesson in the whatever grows can be used in some way department. Brazilian Spinach is not everyone's cup of tea, but if grown in the shade, or sauteed it can be pretty tasty, as can Okinawa Spinach, Ceylon Spinach, Kang Kong, and all those other random perennial greens we can grow. And Cuban Oregano and a bit of garlic can hide a multitude of sins!
